I'm sure this has been a topic discussed many times.

What kind of off season strength & conditioning program do you put your kids/athletes through?

How many times do you max? Sets & Reps? Go off Percentages?

How many days a week do you lift? Split days with lifting & running?

What kind of lifts do you focus on? Specific movements?

Do you enforce nutrition? How?

Conditioning? Burst, lateral, distance?

Just some idea starters, open for anything.
 
I am a huge fan of Husker Power which is a periodization plan. We lift for 7 weeks, then on the 7th week we integrate speed/agility work. You begin with a base phase, then move into a development phase then end with a peak phase. We saw great results from it. In regards to nutrition, I would talk to the kids and parents and offer them a weight gain/weight loss plan that was strictly based off eating the right foods. No artificial enhancers or muscle milk type products. I have that in a word document if you would like it.
