What Now?

Maybe we should talk about BBQ. I'm fixing to smoke some turkeys, brisket and a fresh picnic.
Got my injection liquid ready for the pork. Inject tonight and hit it with smoke tomorrow
 
Smokey I may take up Cooking Meats. You must have lots of practice cooking. An old man once told me on the Briskets to get the one with lots of fat on it. I used to look for the brisket with less. I understand why you need the fat, to tenderize the brisket. Now on the turkeys we have them smoked or fry the in peanut oil. That gets expensive. Our Butt ham we cook in a Dutch Roaster and let it cook overnight. It's tender it falls off the bone. We bought an electric roaster and my advice don't spend your money on one of those. We need to have the kind you put mesquite would into. Yum.
 
I am not a hunter by any stretch of the imagination. So here's my only hunting story:

I was going to college at Sul Ross. My buddy lived out on a ranch at the base of Cathedral Mountain south of Alpine. We decided to go dove hunting on the ranch.

We were out there for about 6 hours and saw 2 dove. I shot at one and missed. But we did kill 27 rattle snakes. I've never seen them so active before or since.

And they taste like chicken.

I used to dove hunt. Now I just buy a 5 pound bag of 7 1/2 shot and throw it out in the field. It's easier on my shoulder and the results are the same.

2 cups tabasco
2 TBSP crushed red pepper
2 TBSP Cayenne Pepper
2 TBSP habanero juice
1 cup Jack Daniels
2 TBSP brown sugar
 
You don't have to cook it with that injection. There's enough pepper and whiskey to cook it from the inside out.
I used a slightly different mixture:
Fresh rosemary 2T
Peppercorns
Sea salt
Granulated garlic, smoked paprika, cayenne pepper, granulated chipotle, olive oil
2 cups liquid ( I drained pineapple in its own juice and water)
Let come to boil and simmer for a couple of hours. Strain and inject.
Grind sea salt and black pepper corns together. Rub on pork. Also sprinkle on some of Fajita Pete's western one step (I used the hickory) let meat marinate 8 hrs or overnight.
Place in smoker @ 225 for at least 10 hours or until internal temp reaches 180.
I put the meat in an uncovered foil pan to cook.
 
You guys are making me hungry and longing to go hunting. Not a bird bird hunter (probably because I am not very good). I am tempted to just take my chances with the deer that keep jumping my 7ft fence, but not real sure the neighbors would approve. I thinking I should just make a spear and maybe they'll let me.

BTW, as it was said, the old basketball site just didn't take off. I wanted to make a go of it, but basketball is so spread out and horribly reported, so it was tough to stay relevant.
 
Granger, I saw a hunting show recently where they were using air rifles for deer. They weren't using a kids daisy banging but they used an air compressor. Might work. Course the kids may not want you to shoot Bambi in the backyard...........
