I know in TAPPS that the rule is if you take a forfeit win one week, you can't take another win/loss for a rescheduled game; in other words, the rescheduled game takes the place of the originally scheduled game. Can be a problem if the forfeit is a district game and the district has decided that the games will count for district standings (which can happen if the school plays some district games and forfeits one or more district games). Not sure what the UIL rule is, but I believe in TAPPS, the district can vote to ignore all results on a school that forfeited part of the district season (in other words, a game played against that school could count as a non-district game, but not as a district game).
Also, I think Lubbock Harmony forfeited last week, so they may be done for the year.
