I went through the MaxPreps listing of teams to compile these numbers so they may be slightly off but I thought it was interesting that the number of schools playing 6/8/9-man football is now greater than 10% of the number of schools playing 11-man football (14,415).

By state:
Alabama- 8 6-man, 14 8-man; Total= 22

Not sponsoring 6/8/9-man football: Alaska, Delaware, Washington, DC, Indiana, Maine, Maryland, Massachusetts, New Jersey, Ohio, Rhode Island, Utah, Vermont, West Virginia

Ohio had 3-5 8-man teams in recent years, mostly in northern OH playing Michigan teams, but none are playing this season.

The National Federation of State High School Association (www.NFHS.org) puts out a participation study every year. According to their information there are:

2017-18 HIGH SCHOOL ATHLETICS PARTICIPATION SURVEY Conducted By THE NATIONAL FEDERATION OF STATE HIGH SCHOOL ASSOCIATIONS Based on Competition at the High School Level in the 2017-18 School Year

14,079 high schools playing 11-man
317 playing 6-man
847 playing 8-man
243 playing 9-man

Football – 6-player (Schools - Players)
California 1- 11
Colorado 37- 464
Montana 42- 407
Ohio ?- 46
Texas 195- 3,947
Wyoming 16- 227

Football - 8-player
Arizona 26- 2,140
California 80- 2,088
Colorado 38- 674
Hawaii 7- 131
Idaho 50- 947
Iowa 62- 1,519
Kansas 111- 1,998
Michigan 71- 1,406
Mississippi 2- 45
Missouri 25- 575
Montana 47- 783
Nebraska 120- 2,950
Nevada 20- 493
New York 6- 95
Ohio ?- 22
Oklahoma 73- 1,745
Oregon 49- 711
Washington 35- 604
Wisconsin 25- 628

Football – 9-player
Minnesota 76- 1,826
North Dakota 69- 1,136
Ohio ?- 174
South Dakota 97- 1,823
Vermont 1- 12

It's all self reported data and doesn't include many private, charter or home school teams so the numbers would be greater than these but it gives a good baseline for public school data. For instance if you take the UIL Div 1 and 2 and Tapps 1-3 that = 196 schools so its leaving out data on TCAL, TCAF, TAIAO, Lone Star Christian and Independent
