The only thing in the article that I question is the necessity of overcooking pork. Unless you are being truly manly and eating feral hogs, you don't need to burn your pork chops to a crisp. I like to brine double rib chops for 24 hours then grill. Baste with simple butter, garlic and worcestshire. .....

Hey, just make sausage out of the feral hogs. Chops/roasts from the tame ones are better.....
